They are harvested by hand in September and ripened in large barrels and lasts 3 months.
After the ripening period has passed and the olive is ready to be eaten, it is pitted (the pit is removed) and stuffed with garlic.
An ideal choice for more spicy taste, from the start of the morning, as a ten-day snack, to the midday salad to the side dish with the evening cocktail.
