Another world-famous olive that takes its name from the region of Kalamata and thrives in our parts of Halkidiki. Its harvest takes place in October and November,It is traditionally removed from bitterness with water and put in brine for 4 to 5 months. It is a delicious dish that we mainly find in salads, but lovers of this variety can also taste it plainly accompanied by a drink.
